Thai Basil Shrimp with Curry Jasmine Rice Thai Basil Shrimp with Curry
Serves: 4

Ingredients:

Curry Jasmine Rice

  • 1 ½ tbsp oil
  • 1 dry chipotle pepper
  • 3/4 cup onion, minced
  • 1 tsp curry powder
  • 1 ½ cups jasmine rice
  • 2 ¼ cups water
  • 3 tbsp fish sauce
  • ½ tsp salt

To finish:

  • 2 tbsp Safeway Canola oil
  • 1 cup peas
  • 1 cup julienne carrot
  • 2 tsp fish sauce
  • Fresh lime juice
  • 1/2 cup chopped cilantro

Basil Coconut Sauce

  • 2/3 cup onion, minced
  • 2 cloves garlic, minced
  • 2 stalks lemongrass, minced
  • 2 tbsp ginger, minced
  • 1 cup green bell pepper, chopped
  • 2 tsp sugar
  • 3 tbsp fish sauce
  • 1 can (13.5oz) unsweetened coconut milk
  • ¼ cup cilantro, chopped
  • ½ cup basil, chopped
  • 1 cup fresh spinach, chopped
  • 1 ½ tsp ground cumin
  • Fresh lime juice to taste

Shrimp

  • 1 ½ lb shrimp (21-30 ct.)
  • 2 tbsp oil
  • 3 tbsp shallot
  • 3 tbsp ginger
  • 3 tbsp garlic

Directions: For the Curry Jasmine Rice, add oil to medium sauce pan and roast chipotle pepper over medium heat until puffed. Add onion and sauté for one minute then add curry powder and toast for 30 seconds. Next, add rice; stir until all rice is evenly coated and yellow. Dissolve the fish sauce and salt into the water, then add to rice and bring to a boil. Set stove on lowest possible heat and cook for 30-35 minutes, or until rice is tender. Let rice stand for five minutes, then fluff with a fork. Let cool for 30 minutes, and then add 2 tsp oil to a wok. Add rice, peas and carrots and lightly fry for 2 minutes. Remove from heat, and then add chopped cilantro, fish sauce and fresh lime to finish. For the Basil Coconut Sauce, add all sauce ingredients except fresh lime juice to a blender and blend until a smooth sauce is formed. In a medium sauce pan, heat sauce over gentle heat until a boil is reached. Simmer for 10 minutes, and then remove from heat and season with fresh lime juice to finish. For the shrimp, add oil to sauté pan, and then add shallot, garlic, and ginger. Sweat for one minute, then add shrimp and cook until done. Garnish with reserved cilantro leaves, basil leaves and a drizzle of coconut milk. Optional: Garnish with bean sprouts for added texture.
